The fridge only pays off in two cases: if you've bought a large amount that will take you a long time to use, or if you live somewhere very hot and don't have a cool spot to store it. In those cases, the cold helps slow down oxidation. That said, bear in mind one detail: when it cools down, the oil thickens and is a little harder to dose.
